T-Bone Steak: A combination of tender filet and hearty New York Strip from the top loin that make for a full-flavored prime cut. This well-marbled cut consists of two lean, tender steaks - the strip and tenderloin - connected by a telltale T-shaped bone. In a T-Bone, the tenderloin is between 1/2 and 1 1/4 inches in diameter. Preferred thickness for T-Bone tends to be in the 1-inch to 2-inch range, our 100% Grass Fed T-Bone Steaks are cut at 1.25" thickness. Thicker steaks don't run the risk of drying out as easily when cooked.
